How a Master Chef Does BBQ

This week Certified Master Chef Richard Rosendale was in Baltimore doing a 2 day sous vide workshop at Stratford University. If you’re not familiar with chef Rosendale, he has been the executive chef of The Greenbrier, was the lead chef for the United States in the 2013 Bocuse d’Or, and is the current host of the TV show Recipe Rehab.
While he was in town, he decided to do a BBQ pop-up at Richardson Farms in White Marsh, MD with chef Ben Simpkins. Before dinner there was an hour long demo where chef Rosendale shared his recipes and techniques for great BBQ. All of his proteins were cooked on The Big Green Egg.
