Mexican Hot Chocolate Cake, Cookie Butter Frosting and Coffee Ganache
This is one of my most popular desserts. You start by making a chocolate cake. It doesn’t have to be fancy or made from scratch. A box cake mix would work here. What I like to do is add a bit of cinnamon and cayenne into the batter. For the ganache, its as simple as heating some coffee on the stove and adding high quality chocolate chips. Turn the heat off and let it sit ten minutes before stirring. I like a ratio of 2 parts chocolate to 1 part coffee by weight.
The real standout here is the buttercream. It’s so good, I often find myself eating it straight from the bowl. Here’s the recipe for it. Let me know what you think.

2 sticks of softened butter
3/4 cup (Trader Joes) crunchy speculoos or Biscoff cookie butter
2 cups powdered sugar
2 tsp (McCormick) cake batter extract
a pinch of salt
Mix the butter and the sugar first. Then add in everything else
