This recipe was inspired by creole dirty rice. Traditionally, you use chicken livers to make it “dirty”. I decided to swap in one organ meat for another, and use scrapple instead. Also, rice is kind of boring, so I wanted to mix it up when it came to the grains. I decided to use a blend of spelt, barley, wheat, rice and whole-grain oats. What do you think?
