Banana Peel Vinegar

Banana peels. What should we be doing with them besides throwing them in the bin? If you search Google, you might see things like Banana Skin Cake. I think I’ll pass right now. Me? I’m starting with vinegar. Just like my Concord Jelly Vinegar, I take my waste (very ripe banana peels) and cover them with white balsamic vinegar. You can do it in a jar on the counter, but if you have a vacuum sealer, it’s a much faster process.

I’m also thinking about using the peels to infuse flavor into things like simple syrup and maple syrup. Have an idea of your own? Please share.
