Banana Peel Vinegar

Banana Peel Vinegar

Banana peels. What should we be doing with them besides throwing them in the bin? If you search Google, you might see things like Banana Skin Cake. I think I’ll pass right now.¬†Me? I’m starting with vinegar. Just like my Concord Jelly Vinegar, I take my waste (very ripe banana peels) and cover them with white balsamic vinegar. You can do it in a jar on the counter, but if you have a vacuum sealer, it’s a much faster process.

I’m also thinking about using the peels to infuse flavor into things like simple syrup and maple syrup. Have an idea of your own? Please share.
