Grape-Nuts Pudding

𝐁𝐫û𝐥é𝐞𝐝 𝐆𝐫𝐚𝐩𝐞𝐧𝐮𝐭 𝐏𝐮𝐝𝐝𝐢𝐧𝐠

Are you looking for a recipe for grapenut pudding? If so, you’ve come to the right place. It may seem old-fashioned to like Grape-Nuts Pudding, but I’m ok with that. It was my dad’s favorite dessert. To be honest, he asked for it at every restaurant, and it kind of embarrassed me. But now that I’m almost 50, I’ve started embracing those old-people things, and I guess this is one of them.

I’m not going to write a whole history of Grape-Nuts (or Grapenut) pudding. Instead, I figured I’d jump right to the recipe. And as with most of my recipes, this one’s in grams. If you’re not weighing your ingredients by now, what are you even doing?

Serves 6

Ingredients

85 g Grape Nuts Cereal
450 g whole milk
230 g heavy cream
3 large eggs
2 teaspoons vanilla extract
125 g dark brown sugar
1/2 teaspoon (3g) salt
2 teaspoons granulated sugar (if bruleeing)
Pumpkin pie spice and sweetened whipped cream for serving

Instructions

Preheat an oven to 325 F.

Heat water to a simmer for a water bath.

Pour the milk over the cereal and let it sit for 20 minutes to soften the Grape Nuts and infuse some of the flavor.

Mix the remaining ingredients and add to the Grape Nuts and milk, stirring to combine.

Divide the mix between 6 ramekins. Place them in a pan and add the water until it comes halfway up the sides of the ramekins. A hotel pan works great for this.

Bake until set, approximately 45 minutes. Remove from the oven and let puddings remain in the water.

The pudding can be be eaten warm or cold. Either way, if desired, top each one with sugar and lighly caramelize like you would a crème brulee.

Top with chantilly (sweet whipped cream) and pumpkin pie spice.
