Competition week is finally here. If you’ve caught any of my posts lately, you might know that I’m one of three chefs participating in a cooking competition this Thursday. I don’t normally do this kind of thing. Frankly, I don’t know how chefs who actually cook in their kitchens do it. Every time you go to work on some prep, you stop and go put out a fire or two. It’s been crazy. So, tomorrow morning I head in early and spend the day with my sous grinding through the prep. I’m making three dishes that represent my style and what I love about food. Keeping my fingers crossed that it all works out. Excited to see what last minute changes I come up with.
