I admit that I’m relatively new to the grits scene. Being a New Englander, they weren’t ever served in my house. Now, grits are all the rage. I’ll admit it, I love Shrimp & Grits. But what about farina? Here’s my recipe:
Farina/Quick Creamy Wheat 1 Cup
Whole Milk 1 Quart
Heavy Cream 3 Cups
Kosher Salt 2 Tsp
Ancho Chile Concentrate Powder (RC Fine Foods) 1 Tsp
Smoked Gouda Cheese (Shredded) 3/4 Cup
Butter 2 T
Combine milk, cream, salt & ancho powder. Bring to a boil. Add cream of wheat and gouda. Simmer for 3-5 minutes. We’re done. Adjust the seasonings as you like. Next time you’re thinking about making grits, try some cream of wheat.
