What to do with all these tomatoes. Something had to be done, so I decided to freestyle some gazpacho. I’ve made gazpacho numerous times and I almost always make it differently.
Sorry, there isn’t a recipe for this. If you are interested, I might be able to talk you through it. Basically, I put as many vegetables in my blender that would fit. I started with a variety of my garden fresh tomatoes (skins, seeds & all). Then I added peeled cucumber & green onions (both from my garden), 3 cloves of garlic, some olive oil, kosher salt, sherry vinegar & about 6 saltines (standing in for stale bread).
I pureed it all until well blended and then pushed it through a fine mesh strainer because I like a silky texture. I finished it with chopped tomato, cucumber & pepper, scallion greens, nasturtium leaves & smoked paprika.
