If you’re not using pork collar, you’re missing out. It has a great meat to fat ratio, is pretty inexpensive and is almost idiot-proof to cook.One of my favorite ways to cook it is to roast it. For this one, I made a simple spice blend of kosher salt, sugar, smoked paprika, granulated garlic & chili powder, and rubbed it on. The meat went on a rack, and put into a 400 degree oven for 15 minutes. Then the temperature was dropped to 250, and it cooked for another 2 hours. This is just on of the ways I like to use it.
