Today is the last full prep day before tomorrow night’s dinner with the food bank. I’m feeling good about my prep and am ready to do this. While I want to keep the menu a surprise, here are some of the ingredients I will be using for the dinner.

I find it slightly ironic that while some of the best chefs in the world are down in Charleston at Cook It Raw, I’m on the opposite end of the spectrum cooking with canned and processed foods. Last year we raised close to $10,000 for our community’s food bank, and with almost double the reservations for this year we’re hoping to raise a lot more money. It’s also a great platform to have discussions about the type of food being distributed to food banks and what we can do to distribute more healthful food options, along with the much needed nutrition education piece.
After tomorrow there will be no more cooking with Spam (probably).I will admit that the Dueling Trail Mix Romesco has found a spot on my current menu. It will be good to get back to doing what I normally do…until next year.
