The Cel-Ray Collins
2 oz Gin (I used Cold River Traditional)
1/2 Lime cut into wedges
2 teaspoons Turbinado Sugar
2 dashes Fee Brothers Celery Bitters
4 oz Dr. Brown’s Cel-Ray Celery Soda
Muddle the lime wedges, bitters and sugar in a cocktail shaker. Add ice and gin. Shake hard. Strain into a chilled Collins glass with ice. Top with cold celery soda and stir to combine. You could muddle some chopped celery and/or celery leaves. Also, you can garnish with a celery stalk, but I hate that crap.
