Just in case the world ends, I thought I should have one last drink. So, what should that be? I started with something special I brought back from Mexico. Xtabentun is a Mayan anise liquor made with fermented honey. We picked some up on our way back from Chichen Itza. Only fitting to put it into a drink since it’s the Mayans predicting the end tomorrow. Since the Sazerac is one of the first true cocktails, and one of my favorites, it might as well be the last cocktail too. And if this is my last drink I wanted it to have rye in it…and bacon. So I give you:
The Aporkalypse
- 3 dashes of Xtabentun
- 2 oz. Templeton Prohibition Rye (fat washed with Benton’s bacon fat)
- 4 dashes of Peychaud bitters
- One twist of lemon
- Sugar cube
Coat a well chilled rocks glass with Xtabentun and swirl to coat. Discard ice and remaining liquor. In a second glass, muddle the sugar cube with a dash of water and the bitters. Add the rye and some ice cubes. Stir, then strain into the first glass. Add the lemon twist. Enjoy it like it’s the last drink you’ll ever have.
