Celery: Not Just Mirepoix

It’s not just something you toss in soup or chicken salad. Why is so little effort spent on exploring its many uses. At a wine dinner this week, we’ll be serving a celery leaf gremolata on our osso bucco. Also, there’s a charred celery purée. We charred the celery on the grill and puréed it with blanched celery leaves and oil. What’s next?
